Paper Wrapped Anniversary Salmon

  1. Preheat the oven to 350 degrees F.
  2. Spray the bottom of the parchment paper with nonstick spray.
  3. Season the salmon with salt and pepper and place on the right side of the paper.
  4. Combine the julienne vegetables and toss together.
  5. Season with salt, pepper, and 2 tablespoons soy sauce.
  6. Place an even amount of black beans and julienne vegetables on top of each fillet.
  7. Top with 2 slices of the chilled butter.
  8. Drizzle some white wine and soy sauce over and around fish.
  9. Sprinkle with ginger.
  10. Starting with the "point" of the paper heart, roll and crimp the edges until the fillets are totally encased and sealed in the "half-heart" shape.
  11. Place packages on a cookie sheet.
  12. Place pan in the center of the oven without a rack above it.
  13. Bake for 15 to 20 minutes, until the parchment has puffed and is light brown.
  14. Remove from oven and transfer to oval platters for serving.
  15. Herb Butter:
  16. 1 teaspoon salt
  17. 1 teaspoon white pepper
  18. 4 ounces unsalted butter, softened
  19. 1 teaspoon minced garlic
  20. 1 teaspoon minced scallions
  21. 1 tablespoon chopped fresh cilantro leaves
  22. In a glass bowl, combine all ingredients for the butter.
  23. Mix well.
  24. Place butter on a piece of plastic wrap and roll the plastic to form into a 1/2-inch thick cylinder.
  25. Refrigerate the butter to set up, about 15 to 20 minutes.
