One-Pan Chicken and Potatoes Weeknight Meal

  1. Heat oil in a large, heavy-bottomed non-stick skillet over a medium flame.
  2. Add potatoes, onion, mushrooms, and chicken to the skillet.
  3. Sprinkle with garlic and onion powders.
  4. Add salt.
  5. Cook 15 to 20 minutes, stirring frequently, until the chicken is no longer pink in the center and the potatoes are tender.
  6. Sprinkle with parsley; serve family-style -- STRAIGHT FROM THE SKILLET!
  7. Serve with a dish of steamed green vegetables or a tossed green salad.
