Beet & Horseradish Sauce (the easy way)
- 2 cans pickled beets
- 1/4 cup sugar
- 2 tsp. vinegar
- 1 jar horseradish, to taste
- Sour cream (optional)
- Place beets in blender and blend until fairly smooth.
- Removed from blender and place in a 1-quart bowl.
- Add sugar and vinegar; stir until blended.
- Add horseradish; stir to blend.
- Taste sauce and adjust seasonings as desired.
