Beet & Horseradish Sauce (the easy way)

  1. Place beets in blender and blend until fairly smooth.
  2. Removed from blender and place in a 1-quart bowl.
  3. Add sugar and vinegar; stir until blended.
  4. Add horseradish; stir to blend.
  5. Taste sauce and adjust seasonings as desired.
