Carrot Slaw with Cashews

  1. Bring a litre water to a boil in a large saucepan.
  2. Blanch carrots until tender, about 4 minutes.
  3. Drain well.
  4. Combine chili, lime juice and maple syrup in a bowl and whisk with a fork.
  5. Add carrots, cashews and cilantro and toss to mix.
  6. Serve at room temperature or chilled for a few hours or overnight.
