French-Fried Sandwiches
- 2 tsp. prepared mustard
- 8 slices buttered bread
- 4 slices of your favorite cheese
- 1 md. tomato, sliced
- 2 eggs
- 1 tbsp. oil
- Salt and pepper
- Oil for shallow frying
- Thinly spread the butter on the bread slices, one side only.
- Spread the mustard evenly over the buttered side of the bread.
- Arrange the cheese on 4 slices and top with tomato slices and the remaining bread.
- Beat the egg and oil together, adding salt and pepper to taste.
- Dip each sandwich into this mixture.
- Heat the oil in the frying pan and fry 2 sandwiches at a time until golden brown; drain on a kitchen paper towel.
- Serve immediately.
