French-Fried Sandwiches

  1. Thinly spread the butter on the bread slices, one side only.
  2. Spread the mustard evenly over the buttered side of the bread.
  3. Arrange the cheese on 4 slices and top with tomato slices and the remaining bread.
  4. Beat the egg and oil together, adding salt and pepper to taste.
  5. Dip each sandwich into this mixture.
  6. Heat the oil in the frying pan and fry 2 sandwiches at a time until golden brown; drain on a kitchen paper towel.
  7. Serve immediately.
