Two Bean Quinoa
- 1/2 cups Quinoa, Uncooked
- 1 cup Snow Cap Beans, Cooked
- 1/2 cups Shelled Edamame Beans, Cooked
- 1/4 whole English Cucumber, Thinly Sliced
- 1/2 whole Avocado, diced
- 1/2 cups Crumbled Feta Cheese
- 1/4 cups Cilantro, Chopped
- 1/2 cups Corn Salsa
- 1/2 whole Lime, Juiced
- 1 Tablespoon Olive Oil
- Salt To Taste
- Pepper To Taste
- Cook quinoa according to package directions.
- Combine all ingredients in a large bowl and mix until just combined, adjusting salt and pepper to taste.
- Refrigerate until cooled, at least 30 minutes, before serving.
