Two Bean Quinoa

  1. Cook quinoa according to package directions.
  2. Combine all ingredients in a large bowl and mix until just combined, adjusting salt and pepper to taste.
  3. Refrigerate until cooled, at least 30 minutes, before serving.
  4. Enjoy!
