Zesty Confetti Slaw
- 3 cups cabbage, shredded
- 12 cup carrot, cut into matchsticks
- 1 cup zucchini, cut into matchsticks
- 12 cup purple onion, thinly sliced
- 12 cup red bell pepper, cut into matchsticks
- 2 tablespoons cilantro, chopped
- 1 tablespoon sesame seeds
- 14 cup fresh orange juice
- 1 teaspoon orange zest, fresh
- 14 cup rice vinegar
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon honey
- 12 teaspoon ground ginger
- 14 teaspoon red pepper flakes
- 18 cup vegetable oil
- Chop and slice all vegetables.
- Mix in bowl.
- Make the dressing using everything except the oil.
- Stream the oil into the mixture & whip to emulsify.
- Pour over the vegetables & mix.
- Stir in the sesame seeds.
- Cover with plastic wrap & chill at least 30 minutes before serving.
