Chocolate Zucchini Muffins
- 14 cup light butter
- 14 cup vegetable oil
- 12 cup brown sugar
- 14 cup Egg Beaters egg substitute
- 14 cup 2% low-fat milk
- 12 teaspoon vanilla extract
- 14 cup cocoa
- 1 14 cups flour
- 12 teaspoon baking soda
- 12 teaspoon salt
- 2 12 cups zucchini, grated
- 14 cup semi-sweet chocolate chips
- 14 cup almonds, chopped
- Melt butter, add oil and sugar, mix with other ingredients.
- Preheat oven to 350.
- Spray muffin tin with non stick spray, fill halfway with mixture.
- Bake for 20 minutes or until done.
