Baked Beef Curry With Custard Topping (Bobotie) Recipe
- 1 1/2 lb Grnd beef, or possibly lamb
- 1 c. Soft bread crumbs
- 1 c. Lowfat milk
- 1 med Minced onion
- 1/4 c. Slivered almonds, minced
- 1/4 c. Raisins
- 1 Tbsp. Lemon juice
- 2 tsp Curry pwdr
- 1 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 x Large eggs, beaten
- 1 c. Lowfat milk Paprika
- Mix beef, bread crumbs, 1 c. lowfat milk, 1 egg, the onion, almonds, raisins, lemon juice, curry pwdr (you can use 2-3 tsp.
- ), salt and pepper.
- Spread mix in ungreased 2-qt casserole.
- Cook uncovered in 325 degree oven 45 min; drain excess fat.
- Mix beaten Large eggs and 1 c. lowfat milk; pour over beef mix.
- Sprinkle with paprika.
- Place casserole in oblong pan, 13 x 9 x 2 inches, on oven rack.
- Pour very warm water, (1 inch) into pan.
- Cook uncovered till beef is done and custard is set, about 30 min.
- Garnish with lemon slices and pimiento if you like.
- Cut into wedges to serve
