HawgDaddy's Meat Loaf

  1. Combine ground meat and sausage to loosely mix
  2. Add preferred amount of onion, bell pepper and jalapeno.
  3. May omit onion if using onion soup mix.
  4. Loosely mix
  5. Mix in onion soup mix (this makes it awesome!)
  6. and add eggs
  7. Salt and pepper to taste.
  8. Add bbq sauce and mix in.
  9. Add 1/4 cup of the bread crumbs and combine.
  10. If needed, add more to dry up a little.
  11. Put in loaf pan or shape in appropriate size on lined cookie sheet
  12. After shaping, form a "V" lengthwise in loaf.
  13. Put in up to 1/2 cup of cheddar cheese and fold sides around to close
  14. Cook at 375 for one hour or until internal temp reaches 170-175 degrees
  15. During last 15 minutes, top with bbq sauce and sprinkle with more cheddar cheese
  16. Allow to sit for up to 10 minutes before cutting for redistribution of juices
