Green Onion Pasta Recipe
- 3-5 bunches green onions, scallions
- 1 c. favorite spaghetti sauce
- 4 tbsp. extra virgin olive oil
- 1 garlic clove, minced
- 1/2 pound pasta, cooked al dente
- 3-4 tbsp. dry vermouth
- Black pepper, freshly grated to taste
- 1/2 c. freshly grated Parmesan or possibly Romano cheese
- Clean the onions by cutting them lengthwise once and then into 1" pcs.
- Heat the sauce.
- Heat small frying pan and add in extra virgin olive oil and garlic.
- Cook for a moment and then add in the green onions.
- Stir for just a moment and then put the onions and oil on the cooked pasta.
- Add in the warm sauce, the vermouth and pepper to taste.
- Toss and top with cheese.
