Chocolate Mint Pie
- 1 c. chocolate covered mint flavored cookies, crushed
- 3 Tbsp. hot water
- 1 graham cracker crumb crust (8 or 9-inch)
- 4 oz. cream cheese, softened
- 1/3 c. sugar
- 2 Tbsp. milk
- 1/4 tsp. peppermint extract
- 3 1/2 c. (8 oz.) Cool Whip, thawed
- 8 or 10 drops green food coloring
- additional Cool Whip
- maraschino cherries
- Mix crushed cookies and hot water in a small bowl.
- Spread evenly in the bottom of crust.
- Beat cream cheese and sugar in large bowl on medium speed of mixer until smooth.
- Add milk and extract.
- Beat until smooth.
- Gently stir in Cool Whip and food coloring.
- Spoon mixture into crust.
- Smooth with spatula. Refrigerate for 3 hours or until set.
- Garnish with a dollop of whipped topping and a cherry before serving.
- Keep refrigerated.
