Easy Herbed Italian Tuna Patties

  1. Mix all ingredients (except the frying oil) thoroughly together in a bowl be sure to break up the tuna.
  2. If mixture seems too loose, add more bread crumbs.
  3. Cover and chill mixture for 20 minutes.
  4. In a skillet or frying pan, add enough olive oil to cover that pan to 1/4 inch or so thickness.
  5. Warm on low.
  6. Shape the tuna mixture into patties and place in skillet.
  7. Turn heat to medium.
  8. Cook patties until they are firm and browned on both sides.
