Garlic Tomato Basil Soup
- 6 garlic cloves minced
- 2 red onions minced
- 30 Roma tomatoes sliced into thirds
- 2 cans fat free chicken broth
- 1 1/2 tsp balsamic vinegar
- 1 1/2 tsp red pepper flakes
- 4 tsp salt
- 1 1/2 tsp pepper
- 5 tbsp dried basil
- 3 tbsp olive oil
- Sautee garlic and onions in olive oil for 15 to 20 minutes.
- Add tomatoes and cook for another 20 to 25 munutes.
- Cover.
- Add chicken broth, balsamic vinegar, pepper flakes, salt, pepper and basil.
- Stir over low heat and cook for 15 minutes.
- Using a hand blender, blend all ingredients together.
- Once blended, cook for another 10 minutes.
- Add more salt for flavor if needed.
