Easy Almond Roca Recipe
- 1 c. butter
- 1 c. brown sugar
- 40 whole saltine crackers
- 12 ounce. pkg. semi-sweet chocolate chips
- 1/2-1 c. finely minced nuts, optional
- Lightly grease bottom of large jelly roll pan.
- Heat butter and sugar in saucepan.
- Bring to a boil and boil 2 min, remove from heat.
- Line jelly roll pan with 40 whole saltine crackers and pour sugar mix over crackers to cover.
- Bake at 350 degrees for 5 min, till bubbling all over.
- Watch carefully.
- Remove and cover with chocolate chips.
- Let heat before smoothly spreading over crackers.
- Cover with finely minced nuts.
- Chill to harden.
