Thai Beef Curry

  1. Into a food processor put all of the ingredients except for the meat, sugar and coconut.
  2. Blitz till a fine mix is achieved.
  3. Heat the oil in a heavy based pan and fry the mixture till it changes colour, and the oil comes to the surface.
  4. Add the meat, sugar and coconut, cover with a lid and simmer till meat is cooked.
  5. Serve with lemon rice.
