Rainbow Clown Cheesecake

  1. Combine biscuit crumbs and butter.
  2. Press into the base of a 22cm spring form pan; chill.
  3. Beat Philly* until smooth, add sugar, lemon juice, lemon rind, gelatine mixture and blend well.
  4. Divide mixture in half.
  5. Add 1/2 cup passionfruit pulp to one portion.
  6. Pour into prepared crumb crust and chill until firm (15 minutes).
  7. Add 1/2 cup strawberry puree to the remaining cheesecake mixture.
  8. Pour over firm passionfruit mixture; chill.
  9. Decorate top of cheesecake with assorted lollies e.g.
  10. smarties to create a clowns face.
