Rainbow Clown Cheesecake
- Base
- 1 cup biscuit crumbs
- 1/3 cup butter, melted
- Filling
- 1 1/2 tablespoons gelatine dissolved in
- 1/4 cup hot water
- 500g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup caster sugar
- 1/4 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 tablespoons grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 1/2 cup passion fruit pulp Target 1 lb For $2.99 thru 02/06
- 1/2 cup strawberry puree
- Topping
- assortment of lollies
- Combine biscuit crumbs and butter.
- Press into the base of a 22cm spring form pan; chill.
- Beat Philly* until smooth, add sugar, lemon juice, lemon rind, gelatine mixture and blend well.
- Divide mixture in half.
- Add 1/2 cup passionfruit pulp to one portion.
- Pour into prepared crumb crust and chill until firm (15 minutes).
- Add 1/2 cup strawberry puree to the remaining cheesecake mixture.
- Pour over firm passionfruit mixture; chill.
- Decorate top of cheesecake with assorted lollies e.g.
- smarties to create a clowns face.
