Brown Rice Extraordinaire

  1. Rinse rice with cold water in bowl or strainer until no longer cloudy.
  2. Lightly oil a 2 liter casserole dish.
  3. Turn oven on to 400F.
  4. Combine all but the last 4 ingredients in the dish.
  5. Cover, bake for 1 hour.
  6. Add olives, stir.
  7. Bake for 30 minutes more, covered.
  8. Let sit for 5 minutes, covered.
  9. Rice should be soft, water absorbed.
  10. Stir in parsley and mint.
  11. Add more salt if desired.
  12. Drizzle with the tbsp of oil and serve.
  13. Yummy!
