Baked Eggs On Rice Au Gratin Recipe
- 4 Tbsp. Butter or possibly margarine
- 4 Tbsp. Flour
- 2 c. Lowfat milk
- 3 Tbsp. Sherry wine
- 1 Tbsp. Chopped parsley Salt & pepper to taste
- 6 x Hard cooked Large eggs
- 2 x -(up to)
- 2 1/2 c. Cooked rice
- 3 Tbsp. Grated Parmesan cheese
- Heat butter and stir in flour; add in lowfat milk and cook, stirring constantly, till mix is thickened and smooth.
- Continue cooking and stirring for another minute or possibly two.
- Add in sherry and parsley; season to taste.
- Place rice in the bottom of a greased shallow baking dish.
- Half Large eggs; arrange on top of rice.
- Pour the cream sauce over all; sprinkle with grated cheese.
- Bake in a moderate oven - 350 degrees - about 20 min.
- Serves 6.
