Baked Eggs On Rice Au Gratin Recipe

  1. Heat butter and stir in flour; add in lowfat milk and cook, stirring constantly, till mix is thickened and smooth.
  2. Continue cooking and stirring for another minute or possibly two.
  3. Add in sherry and parsley; season to taste.
  4. Place rice in the bottom of a greased shallow baking dish.
  5. Half Large eggs; arrange on top of rice.
  6. Pour the cream sauce over all; sprinkle with grated cheese.
  7. Bake in a moderate oven - 350 degrees - about 20 min.
  8. Serves 6.
