Green Chili Dip
- 1 lb ground beef
- 1 (15 ounce) can tomatoes
- 1 (10 ounce) can tomatoes and green chilies (Rotel)
- 34 cup green onion, chopped
- 1 (4 ounce) jar diced pimentos
- 14 teaspoon dried oregano
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 (6 ounce) can tomato paste
- garlic powder, to taste
- corn chips, for serving
- tortilla chips, for serving
- In a large skillet, brown ground beef over medium heat, stirring and breaking up meat into small pieces; drain off fat.
- In a blender, combine tomatoes, Rotel tomatoes with chilies, and green onions; process then add to browned ground beef.
- Add pimentos, oregano, salt and pepper, tomato paste, and garlic to taste.
- Let simmer for about 20 minutes.
- Refrigerate overnight and reheat the next day.
- Serve in a small crockpot or a fondue pot; serve with corn chips and/or tortilla chips.
