Chicken and Red Potatoes
- 1 12 lbs red potatoes, quatered
- 1 cup diced red bell pepper
- 1 12 lbs chicken breasts, cut into 2 inch pieces
- 1 cup sour cream
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 ounce powdered ranch dressing mix
- 1 teaspoon garlic salt
- Preheat oven to 350F.
- Blanch potatoes in boiling water for 3 minutes.
- Drain.
- Prepare a 9x13 casserole dish with nonstick spray.
- Spread the potatoes in the bottom of the dish.
- Layer the peppers and chicken on top.
- In a large bowl combine the sour cream, soup, ranch dressing mix , and garlic salt.
- Spread over the chicken.
- Cover with foil and bake for 1 1/2 hours, until browned and bubbly.
