Delicious and Healthy Home Fries

  1. In a medium sized bowl, soak the diced potatoes in the water with sea salt for about 5-10 minutes (or whenever you feel ready, 10 min recommended).
  2. While the potatoes are soaking, sautee the onions and peppers with a drizzle of olive oil until tender.
  3. Then drain the onion and peppers on a paper towel or cloth.
  4. Drain the water out the potatoes and pat them dry (VERY WELL) add the season salt, basil, parsley, black pepper, bacon bits, and olive oil.
  5. Stir carefully until seasonings are completely submerged in potatoes.
  6. Heat the corn oil in a separate frying pan under medium heat.
  7. Then slowly and carefully add the potatoes and vegetables (while still keeping medium heat).
  8. Constantly check and stir the potatoes to make sure they don't stick (add oil as desired).
  9. Cook potatoes until tender and are a light golden brown.
  10. Remove potatoes and drain.
  11. Serve as a side or an entree.
