Spinach Eggs
- 4 eggs
- 1 cup cooked spinach
- 1/2 onion
- 2 tbsp parsley
- 3 potatoes
- 1 pinch salt
- 1 pinch pepper
- 2 tbsp olive oil
- Chop potatoes into small cubes.
- skins can be peeled if desired.
- Boil potatoes in water until they are soft.
- In a bowl, stir the eggs, salt, pepper, sliced onion, and sliced parsley.
- Heat a frying pan, then add the olive oil
- Add the mix of eggs and spread all over the Frying pan.
- Add the spinach over eggs.
- Let it cook until it releases from the pan
- Season the potatoes with parsley and salt, and serve with the spinahs eggs.
