Spinach Eggs

  1. Chop potatoes into small cubes.
  2. skins can be peeled if desired.
  3. Boil potatoes in water until they are soft.
  4. In a bowl, stir the eggs, salt, pepper, sliced onion, and sliced parsley.
  5. Heat a frying pan, then add the olive oil
  6. Add the mix of eggs and spread all over the Frying pan.
  7. Add the spinach over eggs.
  8. Let it cook until it releases from the pan
  9. Season the potatoes with parsley and salt, and serve with the spinahs eggs.
