Beef, Hominy And Bean Soup Recipe
- 1/2 lb Grnd round, crumbled
- 2 x Cloves garlic
- 1 med Onion, finely minced
- 2 Tbsp. Fresh parsley, finely minced
- 1 Tbsp. Cilantro, finely minced
- 1/2 tsp Dry whole thyme
- 4 c. Beef broth
- 16 ounce Canned pinto beans, rinsed and liquid removed
- 16 ounce Canned hominy, rinsed and liquid removed Salt and pepper, to taste Onions, sliced thin Jalapenos, sliced thin Fresh cilantro, finely minced
- Brown grnd round in lightly greased skillet.
- Add in garlic and onion and cook till onion is lightly browned.
- Add in parsley, cilantro, and thyme and mix.
- Transfer beef mix to a soup pot.
- Add in beef broth, pinto beans, hominy and salt and pepper.
- Bring mix to a boil; reduce heat and simmer for 30 min.
- Serve with garnishes.
