Broccoli Chedder Soup
- 1 tbsp melted butter
- 1/2 medium onion, chopped
- 1/4 cup melted butter
- 1/4 cup flour
- 2 cup half and half cream
- 2 cup chicken stock
- 2 head broccoli chopped
- 1 cup carrots shredded
- 1/4 tsp nutmeg
- 8 oz cheddar cheese
- Saute onion in butter.
- Set aside
- Cook melted butter and flour using a wisk over medium heat for 3 - 5 minutes.
- Then add half & half
- Add chicken stock, let simmer
- Add broccoli, carrots and saute onions.
- Cook on low heat for 15 minutes add salt and pepper to taste
- Stir in cheese and nutmeg.
- Serve with cut up baguette and enjoy
