Mini Frittata

  1. Heat oven to 350F.
  2. Spray 12-cup muffin pan with no-stick cooking spray; set aside.
  3. Divide croutons among muffin cups; evenly sprinkle with chopped ham and onions.
  4. Beat eggs and all remaining ingredients except cheese in bowl with whisk.
  5. Pour egg mixture evenly into muffin cups.
  6. Bake 18-20 minutes or until toothpick inserted into center comes out clean.
  7. Top each frittata with 2 quarters cheese.
  8. Continue baking 1-2 minutes or until cheese is melted.
  9. Run knife around frittata edge; remove from pan.
