Grilled Cornish Hens with Southwestern Rub
- 1 avocado
- 1 c. frozen corn
- 1 small tomato
- 1/4 c. minced red onion
- 1 tbsp. red wine vinegar
- 1 tsp. chili powder
- 1/4 tsp. salt
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 3/4 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. cayenne pepper
- 2 Cornish game hens
- Avocado Corn Relish: In medium bowl, toss together gently avocado chunks, corn, tomato, red onion, vinegar, chili powder, and salt.
- Cover and refrigerate.
- Preheat broiler or prepare grill.
- Grilled Cornish Hens: In small bowl, stir together oregano, cumin, coriander, salt, sugar, and cayenne.
- With fingertips, carefully lift skin on each hen without tearing or removing it.
- Rub spice mixture under and over skin and onto bone side of hen halves.
- Broil hens, skin side down, on broiler pan 8 inches from heat about 10 minutes, or until browned.
- Turn hens and broil 8 to 10 minutes more, or until cooked through.
- Or grill hens over medium heat for 5 to 7 minutes per side.
- Serve hens with Avocado corn Relish spooned over top.
