Venison Carpaccio

• 12 ounces venison
• 1 can anchovy fillets
• 4 tablespoons olive oil

1. Slice the filets into 12 medallions.
2. Lay each slice between 2 sheets of anchovies.
3. Bake in a casserole dish for about 1 hour.
