Monsters, Inc. Mike's Matcha Cookies
- 35 grams Cake flour
- 25 grams Butter
- 15 grams Sugar
- 1/2 tbsp Beaten egg
- 1 tbsp Matcha latte mix, or the equivalent
- 15 grams Cake flour
- 10 grams Butter
- 5 grams Sugar
- 1 tsp Beaten egg
- 1 tsp Hot chocolate mix, or the equivalent
- 20 grams Cake flour
- 10 grams Butter
- 5 grams Sugar
- 1 tsp Beaten egg
- Mix all ingredients for the matcha dough.
- Knead the dough into one lump and wrap in plastic wrap.
- Do the same with the chocolate and plain dough: knead and wrap in plastic wrap.
- Chill all three doughs in the refrigerator for 30 minutes.
- Take out from the fridge and prepare parchment paper.
- Divide the chocolate dough into fourths.
- Roll out and form circles.
- These are Mike's faces.
- Divide plain dough into fifths.
- Roll out four of them and form circles.
- Place on top of the matcha dough to make his eyes.
- Make horns with the remaining fifth of plain dough, and stick on the head.
- Take an adequate amount of chocolate dough to make pupils and mouths.
- Vary the size of eyes or change shapes of mouth to make different expressions.
- Place the finished Mike cookies on parchment paper and bake for 17 to 18 minutes at 340F/170C.
