BBQ Tofu Sandwich

  1. Place onion in a small bowl, cover with cold water and set aside.
  2. Stand tofu on it's long narrow side.
  3. Cut lengthwise into 4 slabs, each about 1/2-inch thick, and pat dry.
  4. Sprinkle with salt.
  5. Heat oil in a large nonstick skillet over medium heat.
  6. Add the tofu slabs.
  7. Cook until browned on both sides, about 4 minutes per side.
  8. Reduce heat to low.
  9. Add bbq sauce and carefully turn the tofu to coat with the sauce.
  10. Cover and cook 3 more minutes.
  11. Meanwhile, combine coleslaw, mayo, vinegar, garlic powder and pepper in a medium bowl.
  12. Drain the onion.
  13. To assemble sandwiches, place about 1/3 cup coleslaw mixture on each bun and top with a tofu slab, pickle slice and a few onion slices.
  14. Spread any sauce remaining in the pan on the top bun.
