Red Wine Chicken Stew
- 150 grams Chicken (I used breast meat)
- 1/4 Onion
- 1/2 pack, combined Mushrooms (optional)
- 1 Olive oil
- 200 ml Red wine
- 2 tbsp Ketchup
- 1 tsp Sugar
- 1 tsp Soy sauce
- 1 tsp (As desired) Japanese Worcestershire sauce
- 1 Salt and pepper
- Cut the chicken into large bite-sized pieces and flavor with salt and pepper.
- Slice the onions and break up the mushrooms.
- Heat some olive oil in a pot and cook the onions.
- Once they've wilted, add the chicken and cook until both sides brown.
- Add the red wine, ketchup, sauce, and sugar, and bring to a gentle simmer.
- Add the mushrooms and continue to simmer.
- Simmer until the sauce reduces by half.
- Adjust the flavor with soy sauce, salt, and pepper.
- Transfer to a serving plate and it's ready.
