Red Wine Chicken Stew

  1. Cut the chicken into large bite-sized pieces and flavor with salt and pepper.
  2. Slice the onions and break up the mushrooms.
  3. Heat some olive oil in a pot and cook the onions.
  4. Once they've wilted, add the chicken and cook until both sides brown.
  5. Add the red wine, ketchup, sauce, and sugar, and bring to a gentle simmer.
  6. Add the mushrooms and continue to simmer.
  7. Simmer until the sauce reduces by half.
  8. Adjust the flavor with soy sauce, salt, and pepper.
  9. Transfer to a serving plate and it's ready.
