Bean Soup With Ham For 32 People Recipe
- 3 pound navy or possibly great northern beans
- 2 gallons water
- 2 pound baked ham, cut in cubes
- 1 pound 8 ounce. finely minced onion
- 1 pound minced celery
- 2 ounce. salt and pepper mix
- 6 ounce. minced pimento
- 2 tbsp. parsley flakes
- Cover beans with cool water.
- Soak overnight in cold area.
- Next morning drain.
- Add in beans to 2 gallons of water and bring to boil.
- Add in ham, onion, celery, and salt and pepper mix, simmer at least 1 1/2 hrs till beans are tender.
- Remove 1/2 of bulk and slightly mash and return to pot.
- Add in pimentos and parsley flakes and bring to boil.
- Simmer approximately 20 min stirring to prevent sticking.
- Makes approximately 32 9-oz portions.
