Crunchy Hazelnut Granola Parfait

  1. Mix oats, hazelnuts, wheat germ, bran and crystalized ginger in a large bowl.
  2. Whisk orange juice, sugar, oil, ginger, cinnamon and salt in a small bowl.
  3. until well blended.
  4. Stir orange juice mixture into oat mixture until blended.
  5. Spread mixture in a 15" x 10" jelly roll pan(or cookie sheet).
  6. Bake at 325* F. for 35-40 minutes, stirring occasionally until brown and dry.
  7. Place mixture in a large bowl.
  8. Stir in dried fruit until blended.
  9. This will make about 8 cups.
  10. To assemble parfait:.
  11. Layer 1/4 cup each granola mix , yogurt and fresh fruit in a parfait glass.
  12. Repeat layering.
  13. Garnish with granola and fresh fruit.
  14. Enjoy!
