Lemon Grilled Chicken Pasta Salad
- 12 ounces, weight Small-sized Pasta Shapes
- 1 whole Fryer Chicken, Sprinkled With Salt And Pepper And Lemon Juice
- 1 whole Green Pepper, Diced
- 1/4 cups Diced Green Onions
- 3/4 cups Mayonnaise
- 3/4 cups Sour Cream
- 1/4 cups Ranch Dressing
- 2 whole Lemons, Juiced
- 1/4 cups Fresh Parsley, Loosely Choped
- 2 pinches Salt And Pepper, to taste
- Grill chicken until juices run clear.
- Allow to cool.
- Meanwhile, cook the pasta according to package directions.
- Drain and rinse well with cold water.
- Pull chicken apart into small pieces.
- (I prefer pulled chicken to diced because it holds on to the pasta pieces better.)
- Mix together mayonnaise, sour cream, ranch dressing, lemon juice, parsley and add salt and pepper as you see fit.
- In a large bowl, mix together pasta, chicken pieces, green pepper and diced green onions.
- Add dressing and stir until well coated.
- Store in the refrigerator until ready to use.
