Easy Texas chilli
- 2 tbsp olive oil
- 1 onion, chopped
- 2 lb 80/20 ground beef
- 4 clove garlic
- 1 tsp fresh black pepper
- 1 can 14.5 oz fire roasted diced tomatoes
- 2 can 14.5 oz dark kidney beans
- 1 can 15 oz tomato sauce
- 1/4 oz comino seed "cumin"
- 3 dash paprika
- 3/4 tbsp light chilli powder
- 1/2 tbsp dark chilli powder
- tbsp beef base
- Add Olive oil to a hot pot and salute your onions
- Add your 80/20 ground beef and cook till most of the pink is out and add your black pepper and minced garlic and cook for 3 mins
- Add your tomatoes and beans and all the dry spices and mix well
- In one of the cans add hot water and the beef base and mix till dissolved and add to the pot
- Turn the heat down to low and simmer for 3 hours, while skimming the fat off as you check it every now and then
- Taste the chilli and add more chilli powder if needed

- I toast my cumin before I grind it to bring out the flavor more and if you want the chilli heated up you can throw a few serrano peppers with a star cut on the tip of them, this will give it heat in the back of the throat but not burn the Hell out of your mouth
