Blue Corn Casserole (Santa Fe) Recipe
- 1 tsp Vegetable oil
- 3 1/2 c. Blue cornmeal
- 1 med Onion, minced
- 1 tsp Baking pwdr
- 2 c. Pinto beans, cooked, liquid removed
- 2 tsp Cumin
- 1 c. Tomato sauce
- 2 tsp Chili pwdr
- 2 1/2 c. Cheese, grated or possibly tofu
- 2 c. -water
- 1/2 c. Green onions, minced
- 1 x Egg or possibly egg sub., beaten Picante sauce
- 1 c. Minced green chilies
- Mix first three ingredients.
- Combine water, egg and chilies in separate bow
vegetable oil, cornmeal, onion, baking pwdr, pinto beans, cumin, tomato sauce, cheese, water, green onions, egg, green chilies
