Canadian Orange Sandwich Bread Recipe
- 3 c. flour
- 4 tsp baking pwdr
- 1 1/2 tsp salt
- 1 x egg
- 1/2 c. sugar
- 1/2 c. minced walnuts
- 1 1/2 c. lowfat milk
- 1 1/2 c. candied orange peel sliced
- Commercially available candied peel is quite suitable for this recipe.
- Sift the flour, baking soda, salt and sugar together; Add in the unbeaten egg and the lowfat milk.
- Stir the liquids quickly and lightly into the dry ingredients, then add in the nuts.
- Pour the batter into a loaf pan approximately 9 by 5 inches.
- Make sure it is well greased and dusted with flour.
- Bake in a moderate oven (350F) for about one hour.
- The bread is done when the crust is brown and no particles stick to a wire cake tester on a tooth-pick thrust into the centre of the loaf.
- Loosen the loaf from the pan with a knife, remove it from the pan and cold on a wire rack.
- The bread shouldn't be sliced till it is thoroughly cold.
