Canadian Orange Sandwich Bread Recipe

  1. Commercially available candied peel is quite suitable for this recipe.
  2. Sift the flour, baking soda, salt and sugar together; Add in the unbeaten egg and the lowfat milk.
  3. Stir the liquids quickly and lightly into the dry ingredients, then add in the nuts.
  4. Pour the batter into a loaf pan approximately 9 by 5 inches.
  5. Make sure it is well greased and dusted with flour.
  6. Bake in a moderate oven (350F) for about one hour.
  7. The bread is done when the crust is brown and no particles stick to a wire cake tester on a tooth-pick thrust into the centre of the loaf.
  8. Loosen the loaf from the pan with a knife, remove it from the pan and cold on a wire rack.
  9. The bread shouldn't be sliced till it is thoroughly cold.
