Weight Watcher Mushroom and Ham Stuffed Chicken Breasts

  1. Melt butter in skillet, add onions.
  2. Saute for 1 minute.
  3. Add mushrooms, saute for 2 minutes.
  4. Place mixture in bowl and add ham, bread crumbs, cheese, chives.
  5. Mix well.
  6. Let cool to room temperature.
  7. Preheat broiler.
  8. Set rack 7 inches from heat.
  9. Cut a pocket in the thickest part of the chicken breast (bone side).
  10. Make pocket big enough to hold 2 tablespoons stuffing.
  11. Stuff and close with a toothpick.
  12. Place on lightly greased broiler pan.
  13. Broil 4 or 5 minutes on each side.
  14. Serves 4.
