COCONUT ANGEL CLOUDS
- 1 angel food cake mix
- 12 cup water
- 1 12 cups coconut
- 12 cup pecans (optional) or 12 cup almonds, crushed finely (optional)
- Mix Angel Food cake with 1/2 cup water.
- Follow directions on cake mix bot and beat to medium stiff peaks.
- Add Coconut and fold in gently.
- Add pecans or almonds if you wish, again, folding in gently.
- Chill mix for 1 hour.
- Preheat oven just before removing chilled cookie mix.
- Drop on ungreased cookie sheet, by teaspoons or tablespoons, depending on the size of cookie you wish.
- Sometimes I like bigger cookies, sometimes just a bite or two.
- Top with additional coconut.
- Crushed nuts too, if you wish.
- Bake at 375 for 12-15 minutes, until tops look dry and bottoms are lightly browned.
- Remove from oven and cool for 2 minutes, on cookie sheet.
- Carefully remove cookies to cool completely.
- ENJOY!
