Cheesy Spaghetti Carbonara
- 1 pound Spaghetti (or Pasta Of Your Choice)
- 6 whole Eggs
- 1/2 cups Milk
- 1/2 cups Shredded Parmesan Cheese
- 1/2 cups Shredded Pecorino Cheese
- 1 teaspoon Black Pepper
- 1 Tablespoon Olive Oil
- 1/2 pounds Bacon, Chopped
- 1 whole Medium Onion, Peeled And Chopped
- Boil a pot of water on medium-high and cook your pasta according to the package instructions.
- While pasta is cooking, whisk together your eggs, milk, Parmesan cheese, Pecorino cheese and black pepper in a medium-sized bowl.
- Set aside.
- Heat your oil in a skillet on medium, then add the bacon and cook until fully cooked and crisp.
- Remove it from the skillet and set aside on a paper towel lined plate.
- Add your onion into the same skillet and cook in bacon grease until translucent, about 5-6 minutes.
- When pasta has reached al dente, drain it and then immediately return it to the hot pot.
- Quickly add in your egg mixture while continuously tossing pasta to coat it.
- The heat of the pasta will cook the egg in your sauce.
- When pasta is coated, add in your onion and bacon and mix it in.
- Then serve it and top with additional cheese if preferred.
