Parsley Cheese Croquettes

  2. In a bowl, break the bread into small cubes, then add milk.
  3. Stir and let sit for a few minutes, until the bread has softened.

  5. Add the rest of the ingredients (except oil) to the bowl, stir with a fork until well incorporated.

  7. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  8. Shape patties with the batter, then add them to the skillet.
  9. Cook for about 5 minutes on one side, until golden brown, then flip and cook for another 2 or 3 minutes.
  10. Remove from pan, then repeat with the rest of the oil and batter.
  11. Serve warm or at room temperature.
