Chicken Chili Stew
- 1/2 onion
- 1 yellow bell pepper
- 1 green bell pepper
- 2 lb chicken
- 2 can red kidney beans
- 2 can hot chili beans
- 1 can pinto beans
- 1 can diced tomatos
- 1 tbsp garlic powder
- 1 tbsp crushed red pepper
- 1 tbsp chili powder
- 1 tbsp cajun seasoning
- 1 envelope taco seasoning
- 2/3 lb mushrooms
- dice chicken to bite sized pieces
- chop peppers, onion, and mushrooms
- in a large pot, heat chicken until cooked through (use any oil in bottom of pot)
- add chopped peppers, onions, and mushrooms to chicken
- add seasoning
- bring to simmer for at least ten minutes
- add remaining ingredients.
- bring to slow boil, then cut heat to low
- leave on low heat for any amount of time (the longer the better!)
- experiment with seasoning amounts to spice to your liking
