Greek Beef And Onion Stew Recipe

  1. In a kettle, heat oil over moderate high heat.
  2. Brown chuck.
  3. Transfer to bowl.
  4. Pour off all but 1 Tbsp.

  6. Add in minced onion and cook over moderate heat till golden brown.
  7. Add in garlic and cook 30 seconds.
  8. Add in wine, broth, tomato sauce, vinegar, brown sugar, cinnamon, cumin, bay leaf, 1 c. water and the chuck.
  9. Bring liquid to boil and braise mix.
  10. Cook, covered, in preheated 350 degree oven for 2 hrs.
  11. Stir in small onions and braise covered for 1 - 1 1/2 hrs till onions are tender.
  12. Stew improves in flavor if cooled to room temperature, uncovered, then chilled covered overnight.
  13. Throw away cinnamon stick and bay leaf.
  14. Sprinkle with parsley.
  15. Serve over rice.
