Ultimate Alsace-Style Mashed Potatoes

  1. Microwave potatoes as directed on package.
  2. (Do not mash.)
  3. Meanwhile, melt butter in medium skillet on medium heat.
  4. Add onions; cook 6 to 8 min.
  5. or until crisp-tender, stirring occasionally.
  6. Remove from heat.
  7. Place potatoes in large bowl.
  8. Add sour cream, cheese, vinegar and sage; mash to desired consistency.
  9. Stir in onions and 1/3 cup bacon.
  10. Sprinkle with remaining bacon.
