Sicilian Meat Roll

  1. Combine eggs, breadcrumbs, tomato juice, parsley, oregano, salt, pepper and garlic.
  2. Stir in ground beef, mixing well with hands.
  3. On waxed paper, pat meat to a 12 x 10-inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edge.
  4. Sprinkle shredded cheese over ham.
  5. Starting from short end, carefully roll up meat, using paper to lift; seal edges and ends.
  6. Bake in 350u0b0 oven for 1 1/4 hours.
  7. Place cheese wedges over top of roll.
  8. Return to oven for 5 minutes, or until cheese melts.
  9. Serve with watermelon pickle or sweet relish.
  10. Serves 6 to 8.
