Sicilian Meat Roll
- 2 beaten eggs
- 3/4 c. soft breadcrumbs
- 1/2 c. tomato juice
- 2 Tbsp. snipped parsley
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 small clove garlic, minced
- 2 lb. lean ground beef
- 8 thin slices boiled ham
- 6 oz. (1 1/2 c.) shredded Mozzarella
- 3 slices Mozzarella, halved diagonally
- Combine eggs, breadcrumbs, tomato juice, parsley, oregano, salt, pepper and garlic.
- Stir in ground beef, mixing well with hands.
- On waxed paper, pat meat to a 12 x 10-inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edge.
- Sprinkle shredded cheese over ham.
- Starting from short end, carefully roll up meat, using paper to lift; seal edges and ends.
- Bake in 350u0b0 oven for 1 1/4 hours.
- Place cheese wedges over top of roll.
- Return to oven for 5 minutes, or until cheese melts.
- Serve with watermelon pickle or sweet relish.
- Serves 6 to 8.
