Crispy Chicken
- 1 teaspoon thyme
- 1 teaspoon dried chives
- 1 cup breadcrumbs
- 14 cup parmesan cheese
- 12 teaspoon salt
- 18 teaspoon pepper
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- 1 egg, beaten
- In a shallow pan, combine herbs, bread crumbs, grated cheese, salt and pepper Drizzle the olive oil over this mixture, working it into crumbs gently until crumbs are coated.
- Dip chicken breasts in beaten egg, then firmly press each coated breast into crumb mixture.
- Cook until thoroughly cooked and juices run clear.
- Cook on a greased pan in the oven set at 400* for 18- 24 minutes.
