Cracker Salmon
- 4 whole Salmon Fillets
- 1 whole Lemon
- 1/4 cups Mayonnaise
- 1/4 cups Grated Parmesan Cheese
- 1 teaspoon Cayenne Pepper
- 1/2 packages (just 1/2 Of 1 Sleeve) Ritz Crackers, Or Any Butter Cracker
- Preheat oven to 400F.
- Line a shallow baking dish with foil.
- Spray the foil with cooking spray.
- Place fillets skin side down in dish.
- Roll lemon on cutting board to loosen juices.
- Cut in half and squeeze over fillets.
- Be generous with lemon juice.
- In a separate bowl, mix the mayo, Parmesan cheese and cayenne*.
- Spread evenly over fillets.
- Making sure to get the sides.
- Lightly crumble crackers (you dont want a powder you want lumps so that theres a crunch when you bite into it).
- Sprinkle evenly over the mayo mixture on the fillets.
- Bake uncovered 12-15 minutes.

- *If you dont have cayenne pepper on hand, Ive used hot sauce as a substitute.
