Cracker Salmon

  1. Preheat oven to 400F.
  2. Line a shallow baking dish with foil.
  3. Spray the foil with cooking spray.
  4. Place fillets skin side down in dish.
  5. Roll lemon on cutting board to loosen juices.
  6. Cut in half and squeeze over fillets.
  7. Be generous with lemon juice.
  8. In a separate bowl, mix the mayo, Parmesan cheese and cayenne*.
  9. Spread evenly over fillets.
  10. Making sure to get the sides.
  11. Lightly crumble crackers (you dont want a powder you want lumps so that theres a crunch when you bite into it).
  12. Sprinkle evenly over the mayo mixture on the fillets.
  13. Bake uncovered 12-15 minutes.

  17. *If you dont have cayenne pepper on hand, Ive used hot sauce as a substitute.
  18. Still tastes great!
