Toasted Almond Biscotti

  1. Preheat oven to 350F Line a baking sheet with parchment paper.
  2. CINNAMON SUGAR:.
  3. Combine cinnamon and sugar.
  4. Reserve.
  5. BISCOTTI:.
  6. Beat eggs, sugar, oil, and vanilla until smooth and creamy, about 3 minutes.
  7. Add next three ingredients.
  8. Beat until well combined.
  9. Stir in almonds.
  10. Halve dough on a lightly floured surface.
  11. Shape each half into a 12-inch x 2 -inch wide log, Place on prepared baking sheet.
  12. Leave a 3-inch space bwtween logs as dough will spread.
  13. GLAZE:.
  14. Brush log with beaten egg and sprinkle with 1 tablespoons cinnamon sugar mixture on each log.
  15. Bake for 30 minutes.
  16. Cool for 10-15 minutes.
  17. Reduce oven temperature to 325F.
  18. Slice each log on the diagonal, into 20 slices (1/2 inch) thick.
  19. Dip each side of biscotti into remaining cinnamon sugar mixture.
  20. Place cut side up on parchment lined baking sheets.
  21. Bake 10 minutes, turn biscotti over and bake 10 more minutes.
