Spinach And Cheese Crustless Quiche (Skf)
- 10 ounces Baby Spinach (Fresh)
- 3 garlic cloves (Crushed)
- 2 teaspoons olive oil
- 1 cup roasted red pepper (drained and press out any liquid)
- 8 ounces cottage cheese (2%)
- 1/3 cup parmesan cheese, grated
- 2/3 cup mozzarella cheese, shredded (2%)
- 1 teaspoon italian seasoning
- 1 teaspoon basil (dry)
- 1 dash cayenne pepper (Ground)
- 6 eggs (beaten)
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- fresh basil
- Spray a saute pan with Olive Oil Spray and add the 2 teaspoons of Olive Oil. Heat pan, add baby spinach and saute for about 5 - 10 minutes. Add garlic and continue to saute.
- Strain spinach and garlic when done. Set aside to cool.
- Grate the mozzarella cheese.
- Prepare a 9" pie plate by spraying with Olive Oil.
- Preheat Oven to 350 degrees.
- Beat the 4 eggs in a large bowl, then mix in the remaining ingredients.
- Pour into prepared pie plate.
- Bake for 40 minutes or until center is set.
- Garnish with Fresh Basil.
- 21 DAY FIX BREAK DOWN: 1 GREEN, 1 RED AND 1 BLUE.
