Bacon Honey Butter Potatoes

  1. Peel potatoes.
  2. Dice them into 1/2 inch by 1/2 inch cubes.
  3. Parboil them for about five minutes so they are slightly tender but not falling apart.
  4. DO NOT OVER BOIL THEM.
  5. Drain water.
  6. Heat oil to 350 degrees in a pan.
  7. Fry them to a golden brown ( about 15-20 minutes) stirring occasionally.
  8. Drain on paper towel.
  9. Mix butter, honey, scallions and bacon in a bowl.
  10. Add potatoes and stir.
  11. Enjoy!
